A Roasted Panzanella Dinner

This weeks chosen Food Matters recipe was a Savory Tomato Crisp, and theeenwell, this is what I made. I’m calling it a roasted panzanella…(or deconstructed tomato crisp?), but REALLY what it was, was an air freshener that tasted AH-Mazing. In fact, Mike went out to feed the goats/chickens/dogs while I got dinner going, and he came back in and said “WOW, whatever is going on in here smells DAMN good”. Actually, he might have been even more vehement, but this is a family friendly blog. ;) Moving on.

Couldn’t have been easier. Here’s how to make your house smell fantastic.

450′ oven/20 min => 2 tubs cherry tomatoes + 2 onions + few cloves of garlic + glug olive oil + dried oregano + S&P [several chunks of feta + pan of old bread, chunked/popped into oven last 8 min] = YUM.

Serve with green salad, and eager dog on side.

Oh wait….in all honesty, dog is entirely optional and not entirely recommended. She really eats WAY too many bread pieces (and cheese crumbles) to be a good dinner guest.
